Heat olive oil in a medium skillet and sauté onion until tender (approx. 5-7 minutes). Set aside.
Preheat oven to 350°F (176°C). Lightly spray a 4 quart casserole dish and set aside.
Combine all ingredients (including sautéed onion) and mix together except optional bacon for top. Top with 6 strips of uncooked bacon and bake covered for 45minutes at 350°F. Increase oven temperature to 400°F and bake uncovered for an additional 15 minutes until bacon is crisp and cooked through.
Tips & Variations
- For a vegetarian version omit bacon and add an additional ½ cup tomato sauce.
- If using fresh beans instead of canned- Rinse thoroughly and follow the cooking instructions. Cook thoroughly.
