Preheat oven to 375°F (190°C) lightly spray 9x13 cake pan.
Melt margarine and rum together in a bowl. Pour into bottom of sprayed 9x13 cake pan. Sprinkle with brown sugar layer with banana slices. Set aside.
In a mixing bowl combine eggs, oil, water, granulated sugar and rum. Mix until combined. Add Kinnikinnick Pancake and Waffle Mix and cinnamon. Mix for 2-3 minutes until combined and fully incorporated. Pour batter over prepared banana Foster layer.
Bake at 375°F (190°C) for 30-35 minutes (check for doneness). Remove from oven and invert pan on serving tray. Leave pan on cake for 5 minutes to ensure easy release.
Finish with Rum drizzle or serve warm with Vanilla Bean ice cream.
Optional Rum Drizzle:
Combine 1cup icing sugar, 2 tbsp rum, 1-2 tbsp water. Drizzle over slightly cooled cake.
Tips & Variations
Be careful of syrup mixture when inverted cake onto serving tray. Very Hot!
