Preheat electric griddle or stove top griddle to 350°F (176°C), coat lightly with cooking spray or butter.
In a bowl combine egg, water and oil; whisk until combined. Add Kinnikinnick pancake and waffle mix and cinnamon whisk until combined. Fold in diced banana, mix just until combined. Drop batter onto preheated cooking surface. Flip pancake when edges begin to curl and top bubbles (keep warm in oven).
Directions (Banana Foster Topping)
In a small skillet, melt 1tbsp butter. Sprinkle melted butter with granulated sugar and place banana slices on sugar in a single layer. Cook over medium low heat until sugar caramelizes and bananas begin to brown (approx. 10 minutes). Using a fork, carefully flip bananas once and continue cooking until sugar is a light golden brown. Carefully pour banana foster over prepared pancakes. Serve with your favourite syrup.
