How to make Fruit Stuffing Mix Video
|
|
Ingredients
2 packages Kinnikinnick Traditional Stuffing Mix (370 g)
2 tbsp olive oil (30 g) 2 celery sticks - chopped (80 g) 2 cloves garlic - minced (6 g) 1 tsp pepper (2 g) ½ tsp salt (2 g) ½ cup dried cranberries - soaked/drained (60 g) ⅓ cup dried apricots - sliced/ soaked/drained (80 g) 1 medium apple - peeled/cored/diced (154 g)
¼ cup fresh parsley - chopped (15 g) 2 tbsp fresh sage - chopped (4 g) 2 cups water - reserve 1 cup (480 g)

Directions
Stuffing
- In a large skillet heat olive oil over medium heat.
- Sauté celery, garlic, pepper and salt (approx. 3 - 5 minutes).
- Add cranberries, apricots, apple, parsley and sage.
- Sauté for 3 - 5 minutes over medium-low heat. Set aside.
- In a large bowl, toss together Kinnikinnick Traditional Stuffing Mix and cooked fruit mixture.
- Add 1 cup water and mix until combined.
- Moisten stuffing with reserved 1 cup water prior to baking in a roaster pan.
Cooking in Turkey (5 kg/11 pound bird)
- Omit 1 cup reserved water if stuffing Fruit Stuffing Mix in bird.
- Pat Turkey dry inside and out.
- Stuff both cavities.
- Skewer cavities closed, tie legs together and tuck wings under back.
- Place in roasting pan breast side up.
- Follow cooking directions based on the weight of your bird to an internal temperature of 165°F (74°C).
Cooking in Roaster
- Preheat oven to 350°F (176°C).
- Place Fruit Stuffing Mix in a casserole dish or small roaster.
- Moisten Fruit Stuffing Mix with reserved 1 cup water.
- Bake covered for 40 - 45 minutes in preheated oven.
- For a crispier finish uncover for the last 5 minutes.
Tips & Variations
- Stuffing can be prepped and stored in the refrigerator up to 24 hours ahead. Hold back reserved 1 cup water until just prior to baking in a casserole dish.
- This recipe makes enough stuffing for a 5 kg/11 pound bird.
