DirectionsPreheat oven to 375°F (190°C). Starting at one end of a hot dog bun, cut ¼ inch thick slices (Approximately 8 pieces). Place cut pieces on cookie sheet and drizzle with olive oil or brush with butter. Bake at 375°F for 7-10 minutes or until desired crispness turning once during baking. Makes 32 Crostini. Topping
Mix together brown sugar, honey, chili garlic sauce, soya sauce, ginger and garlic. Set aside. Lightly salt and pepper chicken strips and set aside. In a medium skillet heat 1½ tbsp olive oil over medium heat. Brown chicken slightly for 2 minutes per side, add half of the prepared sauce and finish cooking chicken over medium heat. Continue cooking until sauce thickens and reduces (approx. 8-10 minutes). Remove from skillet and set aside. In a small saucepan, simmer over medium low heat remainder of sauce. Cook until reduces (approx. 8-10 minutes), be careful not to burn sauce. Set aside. Sauté carrot sticks in ¼ cup water until semi firm (approx. 5 minutes). Set aside. Assemble
Top each crostini with 1 tbsp thickened sauce, top with prepared chicken and drizzle with additional thickened sauce. Garnish with carrot sticks and chive.
