Ingredients

1 package Kinnikinnick Cinnamon Raisin Bread (560 g) 

1 small container mascarpone cheese - reserve ½ container (275 g) 

1 can apple pie filling (gluten-free) (540 ml) 

1 tsp cinnamon (5 g) 

4 large eggs 

1½ cups 10% cream (360 g) 

¼ cup melted butter (50 g) 

¼ cup pure maple syrup (65 g)

Directions

Cinnamon Raisin Bread 

  1. Preheat oven to 350°F (176°C). Line a baking tray with parchment paper or foil. 
  2. Cut Kinnikinnick Cinnamon Raisin Bread in half on a angle.
  3. Place on a baking tray single layer. Bake in preheated oven for 10 minutes turning once until toasted. Remove from oven. Let cool completely. 
  4. Layer toasted Kinnikinnick Cinnamon Raisin Bread in bottom of casserole dish to create a solid layer. Cut into smaller pieces if needed. Reserve remaining Kinnikinnick Cinnamon Raisin Bread for top layer. 
Gluten-free Cinnamon Raisin Baked Apple French Toast

Mascarpone and Apple Filling  

  1. Spread ½ container of softened mascarpone cheese over toasted Kinnikinnick Cinnamon Raisin Bread layer. 
  2. Top with apple pie filling. Spread evenly. Sprinkle with cinnamon. 
  3. Top with layer of toasted Kinnikinnick Cinnamon Raisin Bread. 
Gluten-free Cinnamon Raisin Baked Apple French Toast

Custard Mixture 

  1. In a bowl or large measuring cup combine eggs, cream, melted butter and syrup. Mix until combined. 
  2. Pour Custard Mixture over toasted Kinnikinnick Cinnamon Raisin Bread top layer. Press down slightly to fill between cracks. 
  3. Let sit for 10 minutes. 
  4. Bake in preheated oven for 35 - 40 minutes until Custard Mixture is baked. 
  5. Remove from oven and let rest 15 minutes prior to serving. 
  6. Serve with reserved mascarpone cheese. 

Yields 8 servings 



Tips & Variations

  • Baked Apple Cinnamon Raisin French Toast has a crisp top layer and is soft in the middle.
  • For a homemade Apple Pie Filling, try our Salted Caramel Apple Pie Filling.  
  • For a less sweet version, omit maple syrup.
