Ingredients  

Basil Salsa Verde

½ cup fresh basil - stems removed (12 g) 
½ cup fresh parsley - stems removed (12 g) 
1 medium shallot - peeled/sliced (35 g) 
½ tsp salt (2 g) 
1 tsp black pepper (2 g) 
2 tbsp olive oil (30 g)
½ large lemon - zested/juiced (3 g + 22 g) 

Toppings

2 slices Kinnikinnick Multigrain Bread - toasted (57 g) 
¼ cup Basil Salsa Verde - prepared (30 g) 
6 cocktail tomatoes - quartered (50 g) 
2 tbsp quinoa - cooked (30 g) 
Optional- garnish with shallot slices and olive oil


Directions

Basil Salsa Verde

  1. Blanch basil leaves (about 30 seconds in boiling water). Transfer basil to ice water to cool and pat dry.
  2. In a blender, combine all ingredients for Basil Salsa Verde. Pulse until combined. Set aside.
  3. For best flavour, refrigerate for 1 hour prior to using. 

Assembly 

  1. Divide ¼ cup Basil Salsa Verde into two portions.
  2. Spread evenly on top of 2 pieces of toasted Kinnikinnick Multigrain Bread.
  3. Top with tomato pieces and quinoa. Garnish with optional shallot slices and a drizzle of olive oil. Serve immediately. 
    Yields 2 portions

  • Basil Salsa Verde can be stored for 1 week in the refrigerator.
