Ingredients
Cupcakes
1 package Kinnikinnick White Cake Mix (500 g) 4 large eggs (224 g) 1 cup water (213 g) ¾ cup vegetable oil (115 g) 3 tbsp confetti sprinkles (gluten-free) (45 g) 1½ package Kinnikinnick Birthday KinniTOOS® (330 g)

Buttercream Icing
1 cup butter (222 g) 3 cups icing sugar (480 g) ¼ cup milk 2% (70 g) 3 tbsp confetti sprinkles (gluten-free) (45 g) Optional: colouring for icing

Directions
Cupcakes
- Preheat oven to 350°F (176°C).
- Line 2 muffin pans with baking cups (18 spaces required).
- Place 1 Kinnikinnick Birthday KinniTOOS® in the base of each muffin liner. Set aside.
- In a medium bowl combine eggs, oil and water. Mix with a whisk until combined.
- Add Kinnikinnick White Cake Mix and whisk until combined.
- Fold in confetti sprinkles. Mix just until combined.
- Pour batter over Kinnikinnick Birthday KinniTOOS® (18 portions).
- Use a fork to press cookie down to base in batter.
- Bake in preheated oven for 20 minutes.
- Remove cupcakes from pan to continue cooling.
Buttercream Icing
- In a medium bowl, mix softened butter until smooth.
- Slowly add sifted icing sugar 1 cup at a time alternating with milk. Mix until smooth and incorporated.
- Add optional food colouring.
- Place Buttercream Icing in a piping bag with a star tip.
Assembly
- Pipe a swirl of Buttercream Icing on top of each individual Birthday KinniTOOS® Cupcake.
- Sprinkle with confetti sprinkles or decorate with a Kinnikinnick Birthday KinniTOOS®.
Yields 18 cupcakes
Tips & Variations
- Adding confetti to White Cake Mix: always fold in confetti to batter. If you add to liquid, confetti will dissolve.
- Cupcake recipe can be made into a 9 x 13 cake or two 8 x 8 cakes.
