Fried Chicken
- Cut each chicken breast into 2 inch pieces. Soak chicken in buttermilk and paprika for 1 hour in the refrigerator.
- Place Kinnikinnick Panko Bread Crumbs in a shallow bowl. Set aside.
- In a separate shallow bowl combine garlic powder, black pepper and salt with Kinnikinnick All Purpose Flour Blend.
- Preheat deep fryer to 360°F (182°C).
- Coat buttermilk chicken in flour mixture then buttermilk mixture. Finish in Kinnikinnick Panko Bread Crumbs. Shake off excess crumb. Set aside.
- Deep fry chicken pieces in preheated fryer. Fry a few pieces at a time until golden brown (time will vary depending on thickness of batter and size of chicken pieces).
- Cook to an internal temperature of 165°F (74°C) approximately 10 - 12 minutes per piece. Cool slightly on paper towel.
Assembly
- Preheat oven to 325°F (162°C). Spray a 2 quart baking dish with non-stick spray. Set aside.
- Combine eggs, milk, salt and pepper in a medium bowl. Set aside.
- Cut each waffle into 8 pieces for a total of 48 pieces.
- Layer half of the waffle pieces on the bottom of casserole dish.
- Place half of the Fried Chicken on top of waffle layer.
- Using the remaining waffles, create a second layer.
- Finish with the remaining Fried Chicken on top.
- Dredge with egg mixture and sprinkle with optional cheese.
- Bake in preheated oven for 45 - 50 minutes. Serve Warm.
