Ingredients  

Cookies

1 package Kinnikinnick Sugar Cookie Mix (454 g)

⅓ cup granulated sugar (65 g)

¾ cup butter or margarine - softened (144 g)

1 tsp pure vanilla extract (2 g)

2 large eggs (112 g)

Optional: chocolate or edible decorations/ribbon for hanging

Icing

3 large egg whites (99 g)
3¼ cups icing sugar (325 g)



Directions

Cookie Dough

  1. In a mixing bowl, combine sugar, vanilla and butter. Cream until light and fluffy.
  2. Add eggs one at a time, mixing until incorporated.
  3. Slowly add Kinnikinnick Sugar Cookie Mix to creamed mixture. Mix until combined (pea size lumps).
  4. Finish mixing dough on counter with hands until smooth.
  5. Form dough into a log, cover with plastic wrap and refrigerate for 30 minutes.

Icing

  1. In a medium bowl whip egg whites to soft peak.
  2. Slowly add icing sugar 1 cup at a time until desired thickness. Thicker icing stands up better for detail work. Thinner icing works well if you want to dip cookies first.
  3. Place thin icing in a bowl and dip tops of cookies. Decorate with thicker icing for line work and detail. Colour in your favourite colours for piping or dipping cooled cookies.

Tree Decorations or Gift Tags

  1. Preheat oven to 350°F (176°C). Lightly spray baking tray or line with parchment paper.
  2. Divide dough into 3 portions (easier to work with smaller portions).
  3. Roll dough on parchment paper (use Kinnikinnick All Purpose Flour Blend to aid in rolling out). Roll dough ⅛” thick.
  4. Cut into desired shapes with knife or cookie cutter. Continue with remainder of dough.
  5. Place cutout cookies on baking tray.
  6. Cut a hole ¼” from the top of cutout cookie (to place ribbon through).
  7. Bake in preheated oven for 10 - 12 minutes. Remove from oven and cool on pan for 5 minutes. Finish cooling on cooling rack.
  8. Decorate with royal icing.
  9. Once cookie is dry, tie ribbon through hole for hanging on the tree or tying to a gift.

Table Place Cards

  1. Preheat oven to 350°F (176°C).
  2. Divide dough into 3 portions (easier to work with smaller portions).
  3. Use silicone moulds (½” - 1” in depth) to form cookie dough.
  4. Working with a small piece of dough, fill silicone mould (less seams in the dough will result in less breaks).
  5. Place filled silicone moulds on a baking tray.
  6. Bake in preheated oven for 15 - 17 minutes (time may vary depending on thickness).
  7. Remove from oven and cool in silicone mould. Carefully remove cookie to finish cooling completely.
  8. Dip in melted chocolate or decorate with royal icing.
  9. Write names of your guest on each cookie.
  10. Use as place cards for your next gathering with friends and family.
