Ingredients

2 roasted peppers - jarred or fresh (320 g)

8 slices bocconcini cheese (120 g)

½ cup spinach (20 g)

8 slices genoa salami (gluten-free) (60 g)

8 slices prosciutto (120 g)

4 tbsp pesto (gluten-free) (45 g)

2 tsp balsamic (10 g)

1 package Kinnikinnick Hamburger Buns (245 g)

Directions

Assemble

  1. Slice hamburger buns in half. Hollow out base of bun by pressing crumb down along wall of bun. Remove half of the crumb from top portion of bun to hollow.
  2. Brush the inside of each hamburger bun with pesto covering bottom and sides.
  3. Line bottom of each bun with sliced grilled peppers, spinach, cheese, genoa salami and prosciutto.
  4. Drizzle with balsamic and place top of hamburger buns on.
  5. Wrap tightly with plastic wrap.
  6. Place weights on top of buns to press overnight. Place in refrigerator overnight with weights on. When ready to serve slice sandwich in half.

Yields 4 sandwiches


Tips & Variations

  • Suggestions for weight: brick, cast iron skillet or container filled with water sitting on a pan work well.

  • If using jarred roasted peppers, drain well. Check that they are gluten-free.
