Ingredients
1 package Kinnikinnick Traditional Stuffing Mix (185 g) 3 medium zucchinis- sliced lengthwise in half (960 g) ½ cup ricotta cheese (100 g) 1 tsp black pepper (2 g) ½ tsp salt (2 g) 1 tbsp fresh thyme- stems removed/chopped fine (4 g) 1 medium shallot - diced (35 g) ¼ cup grated parmesan cheese (27 g) 1 tbsp butter (15 g) Optional: fresh thyme for garnish

Directions
- Preheat oven 375°F (196°C). Line a baking tray with foil and lightly grease. Set aside.
Traditional Stuffing Mix - Crumbed 2 ways
- Divide Kinnikinnick Traditional Stuffing Mix into 2 portions (roughly 2 cups each cubed form).
- Using a food processor, finely crumb one portion of Kinnikinnick Traditional Stuffing Mix for filling. Set aside.
- Use a bag and rolling pin to crumb second portion of Kinnikinnick Traditional Stuffing Mix into large uneven crumbs for topping. Set aside.
Zucchini Filling
- Cut zucchinis lengthwise in half.
- Scoop out zucchini flesh into a bowl (careful not to damage skin). Set aside.
- Place hollowed out zucchinis on baking tray. Set aside.
- Add ricotta cheese, pepper, salt, thyme and diced shallot to zucchini flesh. Mix until combined.
- Stir in fine crumbed Kinnikinnick Traditional Stuffing Mix. Mix until combined.
Assembly
- In a small bowl combine grated parmesan cheese, uneven crumbed Kinnikinnick Traditional Stuffing Mix portion and butter for Crumb Topping. Mix until combined. Set aside.
- Stuff hollowed out zucchinis with Zucchini Filling.
- Top with Crumb Topping.
- Bake in preheated oven for 20 minutes.
- Broil for 2 - 3 minutes until crumb is crispy (watch carefully as crumb will brown quickly).
- Remove from oven and let rest 5 minutes.
- Carefully transfer to serving tray.
- Garnish with optional fresh thyme.
- Serve warm.

- 2 cups cubed Kinnikinnick Traditional Stuffing Mix equals 1 cup fine crumbs.
