Ingredients

6 eggs - hard boiled (336 g)
⅓ cup mayonnaise (80 g)
½ tsp salt (2 g)
1 tsp black pepper (2 g)
1 green onion - chopped fine (9 g)
2 celery sticks - diced (60 g)

6 small radishes - thinly sliced (27 g) 
¼ cup cucumber - thinly sliced (26 g)
4 slices Kinnikinnick Wide Loaf White (164 g)

4 slices Kinnikinnick Wide Loaf Seeded (164 g)
Optional: garnish with alpha sprouts or pea shoots


Directions

Egg Filling

  1. Crack egg shells from hard boiled eggs and carefully peel off shell. Rinse peeled eggs to ensure no shell has been left behind. Gently dry with paper towel.
  2. In a medium bowl, mash eggs with a potato masher or fork until crumbly.
  3. Add mayonnaise, salt, and pepper. Mix together until combined.
  4. Add celery and onion to egg mixture and mix until combined.

Assembly

  1. Spread Egg Filling on one side of 2 pieces of Kinnikinnick Wide Loaf White and 2 pieces of Kinnikinnick Wide Loaf Seeded. 
  2. Top with sliced cucumber, radish slices and optional pea shoots.
  3. Top with matching piece of bread. Cut into triangles. 

Yields 16 Triangles or 4 sandwiches
