Ingredients
2 acorn squash - cut in quarters /seeded (1200 g) 1 tsp black pepper (2 g) 1 tsp salt (5 g) 6 tbsp olive oil - reserve 4 tbsp (90 g) 1 medium spanish onion - diced (110 g) ½ cup cremini mushrooms - chopped fine (60 g) 2 celery sticks - diced (80 g) 2 cloves garlic - minced (6 g) 2 cups cooked turkey - diced (500 g) ¼ cup chopped fresh parsley (15 g) 1 tsp fresh thyme - stems removed/chopped fine (2 g)
1 tbsp fresh sage - chopped fine (4 g) 1 cup Kinnikinnick Traditional Stuffing Mix (46 g)

Directions
Acorn Squash
- Preheat oven 400°F (204°C).
- Cut acorn squash in quarters length-wise and remove seeds.
- Drizzle flesh side of squash with 2 tablespoons olive oil and season with salt and pepper.
- Place flesh side down in an oven proof casserole dish and cover with tin foil.
- Bake squash in preheated oven for 30 minutes or until squash is cooked.
- Remove from oven and turn squash flesh side up. Carefully mash the squash flesh to loosen from skin using a fork. Leave mashed flesh in skin (careful not to damage skin). Set aside.
Filling
- In a large skillet sauté onion, celery, mushrooms and garlic in reserved 2 tablespoons olive oil until tender (approx. 5 - 7 minutes).
- Add cooked turkey, parsley, thyme and sage. Continue to cook over medium-low heat for 5 minutes stirring occasionally.
- Remove filling from heat and top acorn squash.
Topping
- In a small bowl combine Kinnikinnick Traditional Stuffing Mix and reserved 2 tablespoons olive oil. Toss to coat.
- Top filled acorn squash. Press down slightly.
- Return to oven at 400°F (204°C) and bake for 15 minutes.
- Remove from oven and let cool for 5 minutes.
