Ingredients
Herb Dijon Mayo
7 - 10 fresh basil leaves (8 g) 1¼ cup mayonnaise (300 g) 2 tsp Dijon mustard (12 g) ¼ tsp pepper (1 g) 1 tsp lemon juice (5 g)

Sandwich
8 slices Kinnikinnick Wide Loaf Seeded (328 g) 3 breasts of chicken - flatten with mallet to ½ inch thick (454 g) ½ tsp salt (2 g) 1 tsp black pepper (2 g) 1 tbsp fresh parsley (2 g) 1 tsp garlic powder (3 g) ¼ cup red onion - diced (30 g) 2 sticks of celery - diced (8 g) ⅓ cup dried cranberries - rinse/chop (38 g) ⅓ cup Herb Dijon Mayo (80 g) ½ cup arugula (10 g)

Directions
Herb Dijon Mayo
- Blanch basil: place basil in boiling water for 30 seconds. Transfer basil to ice water to cool. Pat dry and finely chop basil.
- Mix mayonnaise, mustard, basil, pepper and lemon juice.
- Cover and refrigerate for 1 hour prior to serving.
Filling
- Preheat oven to 350°F (176°C).
- Season flattened chicken breasts with salt, pepper and garlic.
- Bake in preheated oven for 25 - 30 minutes. Check that chicken is cooked (internal temp 165°F).
- Cool and cut into ¼ inch cubes. Set aside.
- Combine cubed chicken, onion, celery, parsley, cranberries and ⅓ cup Herb Dijon Mayo. Mix until combined.
Assembly
- Spread 1 tablespoon Herb Dijon Mayo on two pieces of bread (one side only).
- Top one piece of bread (mayo side) with chicken filling and arugula. Top with other piece of bread (mayo side in).
- Slice Chicken Salad Sandwich in half. Repeat to build remaining Chicken Salad Sandwiches.
Yields 4 sandwiches
Tips & Variations
- Herb Dijon Mayo and chicken can be prepared the day before to save time.
- Extra Herb Dijon Mayo can be stored in an air-tight container for 2 weeks in the refrigerator.
