Ingredients  

Tuna Filling 

1 (8 oz) can chunk light tuna - drained (120 g) 

1 celery stick - finely chopped (56 g)

1 green onion - finely chopped (10 g)

1 tbsp fresh parsley -  chopped (3 g)

¼ tsp salt (2 g)

½ tsp pepper (1 g)

⅓ cup mayonnaise (80 g)


Toppings 

6 slices of Kinnikinnick Wide Loaf Seeded - toasted (246 g)
12 slices bacon - cooked/cut in half (gluten-free) (300 g)
½ tsp pepper (1g)
1 medium tomato on the vine - cut into 4 slices (110 g)
8 pieces of leafy lettuce (96 g)
6 tbsp mayo  (72 g)
Skewers for assembly


Gluten-free Wide Loaf Seeded Tuna Clubhouse Sandwich

Directions

Tuna Filling  

  1. In a bowl flake tuna using a fork. Add chopped celery, onion, parsley, pepper, salt and mayonnaise. Mix until combined.
  2. Refrigerate covered until ready to use.

Assembly

  1. Toast three slices of Kinnikinnick Wide Loaf Seeded.
  2. Spread 1 tablespoon mayonnaise on each slice.
  3. Top 1 piece of toast with 2 pieces of lettuce. Nestle half of Tuna Filling on top. Top with a piece of toast (mayo side up).
  4. Top toast with 2 pieces of lettuce, 2 slices of tomato and 6 half pieces of bacon.
  5. Top with another piece of toast (mayo side in).
  6. Repeat to build second Wide Loaf Tuna Clubhouse.
  7. Cut in half. Use skewers to hold together.

Yields: 2 Tuna Clubhouses

  • Try adding Herb Dijon Mayo - recipe available on this website.
  • Tuna weighs 170 g prior to draining water (120 g after).
