KinniTOOS® Cheesecake Bars

Directions

1. Line the sides and base of a 9 x 13 pan with tin foil and lightly spray with cooking spray. Set aside.
2. Preheat oven to 325°F (162°C).

Base

1. With a pastry cutter or your hands, combine Kinnikinnick Chocolate Cookie Crumbs and butter in a medium bowl.
2. Press crumb mixture into the base of foil lined baking pan.

Filling

1. In a medium bowl beat cream cheese until smooth, scraping down in between mixing (approx. 5 - 7 minutes).
2. Add granulated sugar and sour cream. Mix until smooth.
3. Beat in eggs one at a time, scraping down bowl after each addition.
4. Add vanilla extract and fold in crushed Chocolate KinniTOOS® just until combined.
5. Pour batter over chocolate crumb base.
6. Bake in preheated oven for 60 - 70 minutes.
7. Cool for 15 minutes before cooling in refrigerator for minimum 4 hours.
8. Remove from refrigerator. Carefully lift cheesecake from baking pan using tin foil to aid.
9. Cut into desired sizes and place on serving tray.
10. Serve with your favorite toppings.
