Purpose:
We are currently recruiting for a contract position to support an 18 month Product Development research project in Edmonton.
Position Summary:
Under the direction of the Innovation and Food Safety Manager, the research team will be responsible for targeted development and redevelopment activities with a focus on allergen-free baking, ingredient functionality and following a scientific approach to baking and product development. This will include investigating the chemical, physical, and sensory nature of raw ingredients and finished food products, at laboratory scale and during scale up. The research team will thoroughly document laboratory and industrial-scale trials, and coordinate sample analysis and testing with the Quality Assurance team and third-party laboratories.

Key Responsibilities:
- Develop new methods of production and new formulations to meet project requirements, consulting scientific literature when necessary.
- Work with Supply Chain Manager and Innovation Manager to source and investigate novel and functional ingredients and assess how these ingredients perform within the food matrices.
- Investigate factors that affect the flavour, texture or appearance of new and existing food products.
- Meticulously record processing steps at laboratory scale, keeping in mind processing limitations at industrial scale.
- Create and maintain detailed analyses, results and historical records of all scientific tests, experiments, and trials.
- Lead sensory testing at our Retail Store and participate in external sensory testing projects.
- Develop product specifications, ensuring that finished products meet government and industry standards and satisfy consumer needs.
- Work with QA to ensure food safety at every stage of development.

Qualifications:
- Minimum education requirement: Degree in Food Science or Food Engineering; Master’s Degree preferred.
- Minimum 1 year of laboratory or food product development experience (baking experience is an asset).
- Demonstrated ability to lead and teach others.
- Excellent time management skills, ability to work independently and as part of a team.
- Ability to work as part of a cross-functional team, recognizing, respecting, and utilizing the strengths of others.
- Strong problem-solving and trouble-shooting skills.
- Creative and curious; interested in “thinking outside of the box”.
- Self-motivated and detail oriented.
- Fluent written/verbal communication skills in the English Language.
