Ingredients

Salad

1½ lbs baby potatoes - cut in half or quartered (681 g)

1½ cups sweet corn (341 ml)

2 celery sticks - chopped (80 g)

3 cloves garlic - whole (10 g)

3 tbsp olive oil (36 g)

1 tsp garlic powder (2 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

½ lb bacon - cooked/ chopped (227 g)

1 recipe prepared dressing (336 g)

Optional: garnish with chives

Dressing

½ cup mayonnaise (120 g)

½ cup sour cream 14% (120 g)

1 tbsp lemon juice (10 g)

¼ cup fresh dill - stems removed/chopped fine (2 g)

1/3 cup Parmesan cheese - grated (50 g)

2 tbsp butter - melted (30 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

Directions

Dressing

  • In a medium bowl, combine all ingredients for dressing and refrigerate for 1 hour. Use for potato salad mixture.

Salad

  •  Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper and set aside.
  • In a medium bowl toss baby potatoes, corn, celery, garlic cloves, garlic powder, salt, pepper and olive oil.
  • Place mixture on prepared baking sheet and bake in preheated oven for 10-15 minutes. Flip mixture in oven and bake for an additional 10 minutes or until potatoes are tender and slightly crisp.
  • Remove from oven and let cool for 10 minutes.
  • Remove garlic cloves and finely mince, set aside.
  • Place mixture in a bowl and toss in prepared dressing.
  • Add chopped bacon and minced roasted garlic to mixture, mix until combined.
  • Top with fresh chopped chives. Best served warm.

 


 

Tips & Variations

  • Dressing can be made in advance and stored in the refrigerator for up to 2 days.
