Preheat oven to 375°F (190°C).
In a medium bowl, combine all herbs and spices with Kinnikinnick Panko Crumbs. Set aside.
Rinse flattened chicken breast and brush with olive oil. Coat generously in panko crumb mixture and place on baking sheet. Bake at 375°F for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C). Top chicken with a piece of monterey jack cheese and finish chicken under broil for 2-3 minutes until panko is golden brown and cheese is melted.(watch carefully).
