Directions
Place cinnamon sticks, 2 cups milk and rice in a medium size pot over medium heat. Bring to a boil, stirring constantly. Reduce heat to medium low and cook covered for 20 minutes, stirring occasionally.
Add granulated sugar, salt and vanilla extract to rice mixture. Continue to cook over medium low heat for 15 minutes stirring occasionally.
In a bowl combine 2 cups milk and egg yolk, whisk until combined. Remove rice mixture from heat and slowly add egg yolk mixture stirring constantly so you don’t scramble the egg. Return to low heat (simmer) and continue cooking covered for 20 minutes stirring occasionally. Add raisins to rice mixture and continue cooking until rice is cooked (approx. 15-20 minutes).
