Ingredients

  • 1 c olive oil

  • 1 stalk fresh rosemary (remove from stem)

  • 2 stalk fresh thyme (remove from stem)

  • 1 tsp dried sage

  • 2 tsp poultry seasoning

  • salt & pepper to taste

  • 1/2 seeded lemon

Directions

Rinse turkey & pat dry with paper towels. Stuff & tie turkey. Place in pan/roaster breast side up. Tuck wings under. Rub lemon on turkey skin

Preheat oven to 400F. Cook uncovered for 20 minutes in a convection oven, 30 minutes in normal oven. Turn down to 350F and cover with aluminum foil. Foil should be tight, just lightly tented over the bird. Baste every 20-30 minutes. Cook times vary by size and whether the bird is stuffed so check turkey packaging or online guidelines on safe cooking of turkey. Internal temperature of the turkey should be a minimum 165-170F when done. Remove turkey from pan and place on serving/carving dish.

Plan to let turkey sit on counter for 10-20 minutes before serving
