Prepare 9x13 cake pan (spray with cooking spray) preheat oven to 350°F (176°C).
Combine oil, eggs, and water whisk for 1-2 minutes. Add chocolate cake mix and stir until combined (should have pea size lumps still).Add shredded zucchini and stir until combined.
Pour into prepared 9x13 pan (make sure you spread cake mix evenly). Bake for 30-35 minutes at 350°F or until top of cake springs back when touched.
Tips & Variations
- Don’t over mix the cake mix or it will gelatinize on you. We recommend mixing by hand, with a spatula, or a wooden spoon. If using a Bundt pan bake for 40-45 minutes
