Preheat a lightly oiled stove top frying pan on medium heat.
In a bowl, whisk together vegetable oil, eggs and water until combined. Slowly add dry ingredients to liquid mixture, mix for 2- 3 minutes with an electric mixer until combined. Let mixture sit for 5 minutes.
Pour ¼ cup of batter into heated pan, tilt the pan in a circular motion to spread batter evenly, keeping a round shape. Cook the crepe for 2 minutes or until the edges begin to curl and colour. Flip and cook the other side. Fill with your favorite fillings and roll.
Tips & Variations
- Crepes can be made the night before. Place a piece of parchment paper between each crepe to prevent crepes from sticking.Warm crepes in the microwave to fill and roll.
