Ingredients

Buffalo Hot Sauce

¼ cup favourite cayenne hot sauce (63 g)

1 tbsp white vinegar (12 g)

½ tsp Worcestershire sauce (gluten-free) (3 g)

¼ cup butter (50 g)

½ tsp garlic powder (2 g)


Wings

24 split wings (1008 g)

1 recipe Buffalo Hot Sauce - reserve half (250 g)

1 tsp garlic powder (2 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

Directions

Buffalo Hot Sauce 

  1. In a medium pot combine all ingredients and bring to a boil over medium-low heat.
  2. Remove from heat and let cool slightly. Set aside. 

Yields ½ cup sauce.

Wings

  1. Divide Buffalo Hot Sauce in half. Reserve half the sauce for dipping ( Use half for brushing on chicken wings while cooking and the other half batch for dipping after wings are cooked).
  2. Preheat oven to 375°F (190°C).
  3. Rinse chicken wings.
  4. Season chicken wings with garlic powder, salt and pepper.
  5. Place seasoned chicken wings on a parchment lined baking tray.
  6. Bake in preheated oven for 10 minutes.
  7. Remove from oven and flip chicken wings. Brush with Buffalo Hot Sauce.
  8. Return to oven and bake for an additional 10 minutes.
  9. Remove from oven and flip chicken wings for a second time. Brush with Buffalo Hot Sauce.
  10. Return Buffalo Chicken Wings to oven. Bake for an additional 7 - 10 minutes and or an internal temperature of 165°F (74°C).
  11. Serve with reserved ½ batch of sauce for dipping or toss in sauce prior to serving.


Tips & Variations

  • Chicken is cooked for a total of 27 minutes or an internal temperature of 165°F.
  • Saucing throughout the cooking process allows for better coating of chicken and less chance of burning.
  • Use foil lightly sprayed instead of parchment to help produce a crispier wing.
  • These work great on the BBQ as well!
