Prepare noodles as per package directions and set aside.
In a medium bowl, whisk all sauce ingredients until combined. Set aside.
In a large skillet cook hamburger and sausage over medium heat for 10 minutes. Add parsley, salt, pepper, and 1½ cups prepared sauce; continue to cook until cooked through.
Lightly spray a 9x13 casserole dish, place a layer of lasagna noodles on base. Top noodle layer with half the beef mixture, layer of sliced tomatoes and cottage cheese. Place a layer of noodles on top of cottage cheese layer. Top noodle layer with remaining beef mixture, sliced tomatoes, and mixture of Italian cheese. Top with final layer of lasagna noodles and remaining sauce. Sprinkle top with mozzarella cheese.
Preheat oven to 350°F (176°C). Bake lasagna for 45 minutes to 1 hour until cheese is melted and centre is heated through.
Tips & Variations
- Lasagna freezes well. If baking from frozen state, bake for 2½ to 3 hours at 350°F (176°C) until heated through center.
- The mixture of Italian cheese that we use is romano, parmesan, asiago and provolone. We used Italian beef sausage.
- Use Kinnikinnick Hotdog buns for garlic bread. Brush with garlic butter and broil until golden brown.
