In a medium sauce pan combine all Creamy Pesto ingredients and whisk over medium-low heat until mixture begins to bubble and thicken (approx. 3-5 minutes). Reduce heat to low and continue to stir for 2-3 minutes. Set aside.
Prepare Gluten free pasta according to package directions. Toss ½ cup prepared creamy pesto in cooked pasta. Set aside.
In medium skillet melt butter, add spinach, tomatoes, garlic, salt and pepper. Sauté over medium heat until tomatoes are tender and begin to break (approx. 4-7 minutes). Add prepared shrimp and pasta, stir until combined. Slowly add prepared creamy pesto until desired consistency, season to taste. Cook until all ingredients are heated through. Serve immediately. Yields 2 meal portions
