Ingredients

  • 2 (14oz) cans navy beans (rinsed and drained) (398mlX2)
  • 1 (14oz) can pinto beans (rinsed and drained) (398ml)

  • 1 tbsp olive oil (15g)

  • ½ medium sweet onion (diced) (160g)

  • 1 (14oz) can of tomato sauce (398ml)

  • ¼ cup black strap molasses (85g)

  • ¼ cup brown sugar (50g)

  • ¼ cup ketchup (60g)

  • ½ tsp salt (2g)

  • 1 tsp black pepper (2g)

  • ½ tsp dried mustard (2g)

  • 1 tsp chili powder (2g)

  • ½ tsp cumin (1g)

  • 1 tsp worcestershire sauce (5g)

  • 6pcs bacon (cooked and chopped) (50g)

  • Option: 6pcs bacon (not cooked for top of casserole) (50g)

     




Directions

Heat olive oil in a medium skillet and sauté onion until tender (approx. 5-7 minutes). Set aside.


Preheat oven to 350°F (176°C). Lightly spray a 4 quart casserole dish and set aside.


Combine all ingredients (including sautéed onion) and mix together except optional bacon for top. Top with 6 strips of uncooked bacon and bake covered for 45minutes at 350°F. Increase oven temperature to 400°F and bake uncovered for an additional 15 minutes until bacon is crisp and cooked through.


 

Tips & Variations

  • For a vegetarian version omit bacon and add an additional ½ cup tomato sauce.
  • If using fresh beans instead of canned- Rinse thoroughly and follow the cooking instructions. Cook thoroughly.
