Directions
In a medium size pot, bring to a boil 1½ cups milk and rice stirring constantly over medium heat. Reduce heat to medium low and cook covered for 20 minutes, stirring occasionally. Remove from heat and add granulated sugar, salt, vanilla and cardamom. Stir until combined. Transfer mixture to prepared casserole dish and bake covered in oven at 350°F for 30 minutes. In a small bowl, combine 1 cup milk and egg yolk. Whisk until combined.Set aside. Remove rice mixture from oven and stir rice mixture. Slowly add yolk mixture to rice mixture while continuing to stir. Stir in raisins (for a thinner rice pudding add additional ½ cup milk at this stage). Return to oven and continue to bake covered for 30 minutes until rice is cooked and desired consistency. Serves 8 portions.
