Ingredients

½ cup butter or margarine (96 g)

1½ cups Kinnikinnick All Purpose Flour Blend (300 g)

½ cup granulated sugar (120 g)

1 tsp baking soda (5 g)

3 large eggs (168 g)

½ tsp salt (3 g)

2 cups mashed ripe bananas - approx. 6 - 7 bananas (528 g)

1 tsp cinnamon (3g)

1 tsp pure vanilla extract (3g)

gluten-free banana bread all purpose flour

Directions

  1. Preheat oven to 350°F (176°C). Lightly spray bread pan. Set aside.
  2. Combine Kinnikinnick All Purpose Flour Blend, baking soda, cinnamon and salt. Set aside.
  3. In a separate bowl, use an electric mixer to cream butter, vanilla, and sugar until light and fluffy.
  4. Add eggs one at a time, mixing after each addition.
  5. Fold in mashed bananas.
  6. Slowly add dry ingredients to banana mixture. Mix after each addition until fully incorporated (be careful not to over mix).
  7. Pour batter into greased bread pan.
  8. Bake in preheated oven for 65 - 70 minutes (check for doneness, top will spring back when touched lightly).
  9. Remove from oven.
  10. Cool for 10 minutes in bread pan. Carefully remove Banana Bread and finish cooling on wire rack.
