Ingredients  

Banana Foster Base

2 tbsp margarine (30 g)
2 tbsp rum (20 g)
½ cup brown sugar (102 g)
3 large bananas - sliced (405 g)


Cake

1 package Kinnikinnick Pancake and Waffle Mix (454 g)
¾ cups vegetable oil (115 g)
1½ cups water (320 g)
2 large eggs (112 g)
2 tsp cinnamon (4 g)
2 tbsp rum (20 g)
⅓ cup granulated sugar (73 g)


Rum Drizzle

1 cup icing sugar (240 g)
2 tbsp rum (20 g)
1 tbsp water (15 g)



Directions

Banana Foster Base

  1. Preheat oven to 350°F (176°C). Lightly spray 9 x 13 cake pan.
  2. Melt margarine and rum together in a bowl. Pour into bottom of sprayed 9 x 13 cake pan.
  3. Sprinkle with brown sugar and layer with banana slices. Set aside.

Cake

  1. In a mixing bowl, combine eggs, oil, water, granulated sugar and rum. Mix until combined.
  2. Add cinnamon and Kinnikinnick Pancake and Waffle Mix. Mix for 2-3 minutes until combined and fully incorporated.
  3. Pour batter over Banana Foster Base.
  4. Bake in preheated oven for 25 - 30 minutes (cake will spring back when lightly touched).
  5. Remove from oven and let cool for 5 minutes.
  6. Carefully invert pan on serving tray and leave pan on cake for 5 minutes to ensure easy release. Remove pan.

Rum Drizzle

  1. Combine all ingredients in a small bowl. Mix until smooth. Drizzle over slightly cooled cake.
