Ingredients

8 chicken thighs - deboned (587 g)
2 tsp black pepper - reserve 1 tsp (4 g)
1 tsp salt - reserve ½ tsp  (5 g)
½ cup Kinnikinnick Bread Crumbs Panko Style (55 g)
½ cup Kinnikinnick All Purpose Flour Blend (92 g)
¼ cup olive oil (55 g)
568 g grape tomatoes - assorted colours
1 medium yellow bell pepper - thinly sliced (160 g)
1 medium white onion - thinly sliced (320 g)
200 ml black olives - pitted (80 g)
3 cloves garlic - minced (12 g)
2 tbsp capers (32 g)
2 tbsp fresh oregano (4 g)
½ cup chicken broth - prepared (gluten-free)(120 g)
Optional: garnish with fresh basil



Directions

  1. In a shallow bowl combine ½ tsp salt, 1 tsp pepper, Kinnikinnick Panko Bread Crumbs and Kinnikinnick All Purpose Flour Blend.
  2. Coat chicken in crumb mixture. Shake off excess crumb. Set aside.
  3. In a deep skillet, heat olive oil and brown chicken. Cook chicken until crispy and evenly browned turning during cooking process (chicken will finish cooking in sauce). Set aside.
  4. Using the same pan sauté tomatoes, bell pepper, onion, garlic, and olives until tender over medium heat (approx. 5-6 minutes).
  5. Add reserved salt, reserved pepper, oregano, capers and chicken broth to vegetables. Continue to cook over medium-low heat for 10 minutes.
  6. Nestle browned chicken in vegetable mixture.
  7. Continue to cook covered for 20 - 30 minutes over medium-low heat. Cook until chicken is cooked through (internal temperature 165°F) and sauce has thickened slightly.
  8. Serve with your favourite pasta.
