Ingredients  

1½ pounds ground beef (681 g)

1 medium spanish onion - chopped (110 g)

1 jalapeno pepper - seeds and core removed/minced (14 g)

2 tbsp ground cumin (12 g)

1 tsp chili flakes (5 g)

1 tsp chili flakes (5 g)

3 garlic cloves - minced (7 g)

3 tbsp unsweetened cocoa powder (45 g)

1 tsp salt (5 g)

1 tsp ground pepper (2 g)

½ tsp cayenne pepper (1 g)

2 tbsp oregano flakes (12 g)

¼ cup fresh parsley - chopped (15 g)

4 vine tomatoes - chopped (444 g)

398 ml brown beans packed in tomato sauce (14 oz)

398 ml black beans - rinsed/drained (14 oz)

398 ml kidney beans - rinsed/drained (14 oz)

398 ml pinto beans - rinsed/drained (14 oz)

2½ cups tomato sauce (612 g )

1 cup beef stock (gluten-free) (240 g)

Optional: sour cream  and chives for garnish (60 g)

Directions

  1. In a Dutch oven, sauté hamburger over medium heat until ¾ cooked (approx. 7 - 10 minutes).
  2. Add onion, jalapeno, cumin, chili powder, chili flakes and garlic. Continue cooking until onions are soft (approx. 10 - 15 minutes).
  3. Add cocoa powder and stir until combined.
  4. Add remaining seasonings, herbs, tomatoes and variety of beans. Cook for 15 minutes stirring occasionally.
  5. Add tomato sauce and beef stock. Stir and cover.
  6. Reduce heat to low. Cook covered for 1 hour stirring occasionally.
  7. Serve with optional dollop of sour cream. Garnish with chives.

Yields 12 servings
