Ingredients 

  • 3 cups shredded long coconut (300g)

  • 4 large egg whites (132g)

  • ½ cup granulated sugar (105g)

  • ¼ tsp salt (1g)

  • 4oz semi-sweet chocolate (melted) (113g)



Directions

Preheat oven to 350°F (176°C). In a medium bowl, beat egg whites until soft peak. Slowly add granulated sugar and continue mixing until stiff peaks. Fold in coconut and salt. Slowly pour in melted chocolate, fold into mixture until combined.


Drop by spoonful or cookie scoop onto parchment lined cookie sheets leaving 1½ inches between cookies. Bake for 20-22 minutes. Cool for 5 minutes on pan, finish cooling on cooling rack. Yields 20 Cookies.
