Ingredients

3 cups shredded long coconut (300 g)

4 large egg whites (132 g)

½ cup granulated sugar (105 g)

¼ tsp salt (1 g)

⅓ cup cocoa powder (37 g)

Directions

  1. Preheat oven to 350°F (176°C).
  2. In a medium bowl, combine coconut, cocoa powder and salt. Set aside.
  3. In a separate bowl, beat egg whites until soft peak.
  4. Slowly add granulated sugar and continue mixing until stiff peaks.
  5. Fold in coconut mixture.
  6. Drop by spoonful or cookie scoop onto parchment lined baking tray leaving 1½ inches between cookies.
  7. Bake in preheated oven for 20 - 22 minutes.
  8. Cool for 5 minutes on pan, finish cooling on cooling rack.

Yields 20 Cookies.
