Ingredients 

  • 1 pkg Kinnikinnick Chocolate Cake Mix (500g)

  • 4 eggs (224g)

  • ¾ cup water (160g)

  • ¾ cup oil (115g)

  • 18 small navel oranges (2880g)



Directions

Preheat oven to 350°F (176°C).Cut base of orange slightly so orange sits up (careful not to cut through to flesh).In the front of the orange (mid- way down) cut out eyes, nose and mouth for Jack “O” Lantern face. Cut off the top of the navel oranges and carefully scoop out the pulp and juice into a bowl. Clean out the eyes, nose and mouth cuts. Wrap each prepared orange ¾ with tin foil (so cake batter doesn’t seep out of cut outs) leaving top open.

 

In a medium bowl combine eggs, oil and water, mix with a whisk until combined. Add Kinnikinnick Chocolate Cake Mix and whisk until combined. Pour batter into prepared oranges filling ¾. Bake for 20-25 minutes.

 

Yields 18 filled oranges


 

Tips & Variations

  • Use the juice to replace the water in the cake batter for more orange flavour.
  • This recipe works great in the campfire too! Omit Jack O Lantern face part and wrap entire filled orange (with top placed back on) in tin foil. Cook in amber coals until cake is baked.
