Ingredients

1 package Kinnikinnick Pancake and Waffle Mix (454 g)
2 tbsp cinnamon - reserve 1 tbsp (12 g)
1 cup vegetable oil (195 g)
¾ cup granulated sugar - reserve ½ cup (216 g)
4 large eggs (224 g)
1 tsp pure vanilla extract (4 g)
½ cup milk (112 g)
½ cup unsweetened apple sauce (160 g)
2 apples - peeled/cored/diced (280 g)
Optional: icing sugar and cinnamon for dusting


Directions

  1. Preheat oven to 325°F (162°C). Generously spray bundt pan or 9 x 13 cake pan.
  2. In a small bowl, toss diced apples in 1 tablespoon cinnamon and ¼ cup granulated sugar. Set aside.
  3. In a medium bowl combine oil, reserved ½ cup sugar, eggs, apple sauce and milk. Whisk until combined.
  4. Slowly add Kinnikinnick Pancake and Waffle Mix and reserved 1 tablespoon cinnamon to liquid mixture. Mix for 2 - 3 minutes with an electric mixer until combined.
  5. Fold in prepared apples.
  6. Pour batter into cake pan.
  7. Bake in preheated oven for 60 minutes (cake will spring back when lightly touched).
  8. Remove from oven and let cool for 10 minutes before inverting on serving dish.

Yields 1 Cake
