Ingredients  

Raspberry Puree 

200 g frozen raspberries

¼ cup granulated sugar (54 g) 

Blueberry Puree 

200 g frozen blueberries 

¼ cup granulated sugar (54 g)

Additional

9 cups ice cubes - crushed (1260 g) 

2 cups water (480 g) 

1 can coconut milk - full fat (400 g) 

Optional: drinking straws 




Directions

Raspberry Puree 

  1. Bring raspberries and sugar to a boil in a medium pot.
  2. Reduce heat and simmer for 20 minutes.
  3. Cool and refrigerate in an air-tight container.

Blueberry Puree

  1. Bring blueberries and sugar to a boil in a medium pot.
  2. Reduce heat and simmer for 20 minutes.
  3. Cool and refrigerate in an air-tight container.

Assembly 

First Layer (Raspberry)

  1. In a electric blender combine cooled Raspberry Puree, 3 cups ice and 1 cup water. Using pulse setting, blend mixture until smooth and combined. 
  2. Divide Raspberry Mixture into base of four tall glasses (20 oz glasses). 
  3. Freeze for 20 minutes until layer is fairly set. 

Second Layer (Coconut) 

  1. In a small bowl mix coconut milk until smooth and combined. 
  2. In a electric blender combine coconut milk and 3 cups ice. Using pulse setting, blend mixture until smooth and combined. 
  3. Divide Coconut Mixture and pour over frozen Raspberry Mixture bases.
  4. Freeze for 10 minutes until layer is fairly set. 

Third Layer (Blueberry)

  1. In a electric blender combine cooled Blueberry Puree, 3 cups ice and 1 cup water. Using pulse setting, blend mixture until smooth and combined. 
  2. Divide Blueberry Mixture and pour over frozen Coconut Mixture bases.
  3. Freeze for 20 minutes until layer is fairly set. 
  4. Pull from freezer and let warm up for 10 minutes at room temperature.
  5. Place optional straws in and enjoy. 

Yields 4 portions

Tips & Variations

  • Layers are for presentation, best mixed together for best flavour. 
  • Change up your raspberries for strawberries.
