Ingredients

  • 4 medium potatoes (cut into ¼ inch pieces and boiled) (630g)

  • 1tbsp olive oil (15g)

  • ½ onion (diced) (140g)

  • ½ bell pepper (diced) (105g)

  • 2tbsp fresh parsley (chopped) (7g)

  • 1tbsp fresh thyme (chopped) (2g)

  • 1lb cooked corn beef (cubed) (454g)

  • 1tbsp black pepper (6g)

  • ½ tsp salt (2g)

  • 1tbsp garlic powder (6g)

  • Optional: 4 eggs (224g)


Directions

In a medium pot boil potatoes until tender. Drain potatoes and set aside.


Heat olive oil in a medium skillet and sauté diced onion until tender (approx. 7-10 minutes). Add diced peppers, cooked potatoes, and fresh herbs. Cook for 10 minutes over medium heat. Add remaining seasoning and corn beef, continue cooking over medium heat until potatoes are slightly crisp and flavours are combined (approx. 30 minutes).


In a separate frying pan, baste, poach or cook eggs sunny side up. Divide corn beef hash into 4 portions and top with cooked egg.


 

Tips & Variations

  • Serving suggestion. cut english muffins into wedges and brush with butter. Top with grated sharp cheddar cheese and broil until melted.

  • Make great dippers for your eggs.
