Ingredients

½ cup cranberry sauce (132 g)
½ wheel of brie - trim top and bottom rind off (175 g)
¾ loaf Kinnikinnick Whole Grain Bread (378 g)         
1 tbsp olive oil (15 g)
Optional: fresh parsley for garnish

Directions

Toast Cups 

  1. Preheat oven to 375°F (190°C). Spray mini muffin tins with non-stick spray and set aside. 
  2. With a rolling pin, carefully flatten slices of Kinnikinnick Whole Grain Bread. Cut each slice into two circles.
  3. Form bread circles into muffin tin and drizzle with olive oil.
  4. Bake in preheated oven for 10 - 12 minutes.

Assembly

  1. Cut brie into 24 pieces. Place a piece of brie into base of warm Toast Cup.  
  2. Return to oven and bake for 5 - 7 minutes or until brie is melted.
  3. Remove from oven and place warm Toast Cups on serving tray.
  4. Top with a dollop of cranberry sauce and garnish with fresh parsley. Serve warm. 
    Yields 24 appetizers
