Ingredients  

Cake

1 package Kinnikinnick All Purpose Flour Blend (454 g)

2 tsp cinnamon (4 g)

1 tsp baking powder (5 g)

½ tsp baking soda (2 g)

¼ tsp salt (1 g)

1¼ cups granulated sugar (300 g)

½ cup unsalted butter (96 g)

½ cup vegetable oil (109 g)

2 large eggs (112 g)

zest of 1 medium orange (6 g)

½ cup orange juice (124 g)

¾ cup buttermilk (183 g)

2 cups cranberries - fresh or frozen (240 g)

Orange Drizzle

1 cup icing sugar (120 g)

2 - 4 tbsp orange juice (30 g)

Optional: decorate with cranberries and orange slices 

gluten-free Cranberry Orange Bundt Cake

Directions

Cake

  1. Preheat oven to 325°F (162°C). Generously spray a bundt pan.
  2. In a bowl combine Kinnikinnick All Purpose Flour Blend, cinnamon, baking powder, baking soda and salt. Set aside.
  3. In a separate bowl, use an electric mixer to cream sugar, butter and oil until fluffy.
  4. Add eggs, orange zest and juice. Mix until combined.
  5. Add buttermilk and mix until combined.
  6. Slowly add dry ingredients to orange mixture, mixing after each addition until fully incorporated.
  7. Fold in cranberries.
  8. Pour into bundt pan and spread evenly.
  9. Bake in preheated oven for 65 - 70 minutes (check that the cake is done: cake will spring back when touched lightly on top).
  10. Remove from oven and let cake cool 10 minutes prior to inverting pan.
  11. Carefully remove pan and let cool before adding icing.

Yields 1 cake

Orange Drizzle

  1. In a small bowl, slowly add orange juice to icing sugar. Mix after each addition to achieve desired consistency.
  2. Decorate with optional cranberries and orange slices.

Tips & Variations

  • Fresh or frozen cranberries will work.
  • For a twist, use blood oranges instead of navel oranges.
