Ingredients  

Caesar Dressing 

1 garlic clove- minced (3 g) 
½ tsp coarse salt (2 g) 
2 large egg yolks () 
2 tbsp lemon juice (30 g) 
1 tsp Dijon mustard (6 g) 
½ cup extra virgin olive oil (100 g)  
½ tsp black pepper (1 g)
3 tbsp shaved parmesan cheese (33 g)  
Optional: ¼ tsp Worcestershire (gluten-free) 

Homemade Croutons 

1 Loaf Kinnikinnick White Bread - cut into 1 inch cubes (454 g)
1 tbsp garlic powder (5 g) 
2 tbsp dry parsley flakes (3 g) 
½ tsp salt (2 g) 
1 tsp black pepper (2 g) 
1 tbsp olive oil (15 g) 

Caesar Salad 

1 cup Homemade Croutons (50 g) 
2 heads romaine lettuce – chopped (680 g) 
50 g shaved parmesan cheese 
5 slices cooked bacon (gluten-free) – chopped (70 g)

Directions

Caesar Dressing 

  1. Whisk together minced garlic, coarse salt and egg yolks.
  2. Add lemon juice and Dijon mustard. Whisk until combined.
  3. Add olive oil in a slow and steady stream to egg mixture while whisking vigorously.
  4. Add black pepper, parmesan cheese and optional Worcestershire sauce to Caesar Dressing. Mix until combined.
  5. Refrigerate until ready to use.

Homemade Croutons 

  1. Preheat oven to 350°F (176°C). Line a baking tray with parchment. Set aside. 
  2. Toss bread cubes with garlic, parsley salt and pepper until coated.
  3. Spread herbed cubed bread evenly on pan. Drizzle with olive oil. 
  4. Bake at 350°F (176°C) for 10 minutes, turning bread cubes once in oven.
  5. Turn oven off. Leave pan of herbed bread cubes in oven for 10 minutes.
  6. Remove from oven and let cool and dry overnight.
  7. Store Homemade Croutons in an airtight container for up to 2 weeks.

Family Style Caesar Salad 

  1. In a bowl combine romaine lettuce, bacon and 1 cup Homemade Croutons.
  2. Add Caesar Dressing a couple tablespoons at a time. Mix until combined and lettuce is coated.
  3. Top with parmesan cheese. 

Individual Caesar Salad

  1. Build individual salads with romaine lettuce and top with dressing as needed.
  2. Finish with Homemade Croutons, bacon and parmesan cheese.
