Ingredients

1 package Kinnikinnick Pancake and Waffle Mix (454 g)
½ tsp baking soda (2 g)
½ cup butter (113 g)
¼ cup granulated sugar (50 g)
2 large eggs (112 g)
1 tbsp vanilla extract (5 g)
1 tsp cinnamon (5 g)
¼ cup pumpkin seeds - reserve 1 tbsp (32 g)
¾ cup apple sauce - unsweetened (205 g)
2 cups dates - soaked/drained/chopped (260 g)

½ cup raisins (77 g)

Directions

  1. Preheat oven to 350°F (176°C). Lightly spray a loaf pan.
  2. In a medium bowl, combine Kinnikinnick Pancake and Waffle Mix, cinnamon, and baking soda. Set aside.
  3. In a separate bowl, cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, mixing after each addition. Slowly add dry mix alternating with applesauce, mix after each addition until fully incorporated.
  4. Fold in dates and raisins. Mix until incorporated.
  5. Pour batter into prepared loaf pan. Top with reserved 1 tablespoon of pumpkin seeds.
  6. Bake in preheated oven for 60 - 65 minutes (check for doneness - loaf will spring back to the touch).
