Ingredients

12 large eggs (672 g)

1/3 cup mayonnaise (80 g)

1 tsp paprika (1 g)

1 tsp Dijon mustard (5 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

Optional: garnish with dill

Directions

Hard Boiled Eggs

  1. In a saucepan, submerge eggs in water.
  2. Turn heat to high and bring to boil.
  3. Reduce heat to medium-low and cook for an additional 15 minutes.
  4. Remove from heat and run under cold water for 3 minutes.
  5. Remove Hard Boiled Eggs shells and rinse Hard Boiled Egg under water (to remove any remaining shell). 
  6. Gently dry Hard Boiled Eggs with paper towel.

Egg Filling 

  1. Slice Hard Boiled Eggs in half lengthwise. Carefully scoop out yolk.
  2. Place emptied egg whites on serving dish. Set aside.
  3. In a medium bowl mash yolks with a fork until fine crumbs.
  4. Add mayonnaise, salt, pepper and Dijon mustard. Mix together until smooth.

Assembly 

  1. Pipe or scoop filling into egg whites.
  2. Sprinkle with paprika and top with optional dill sprig.


Tips & Variations

  • Deviled eggs can be stored up to 2 days in the refrigerator.
