Ingredients

1/3 cup cocoa powder (40 g)
½ cup light brown sugar (90 g)
1½ tbsp coarse salt (22 g)
3 tbsp ancho chili powder (21 g)
¼ tsp cayenne pepper (1 g)
1 tbsp dried oregano (2 g)
1 tbsp dried mustard (5 g)
1 tsp ground ginger (5 g)
1 tsp black pepper (2 g)
1 tsp cumin (2 g)
1 tbsp garlic powder (10 g)

Directions

Mix all ingredients together. Rub can be stored in an airtight container for up to 1 month.

If you don’t have ancho chili powder regular chili powder will do.
