Ingredients

  • 1 tbsp brown sugar (14g)
  • 2 tbsp honey (44g)
  • salt and pepper to taste
  • 1 ½ tbsp. chili garlic sauce (27g)
  • 1/3 cup gluten free soya sauce (88g)
  • ½ tbsp. minced fresh ginger root (9g)
  • 1 tsp minced garlic (8g)
  • 1 ½ tbsp. olive oil (15g) + 1 tbsp. olive oil (10g)
  • 3 chicken breast (boneless/ skinless cut in ½ inch strips) (454g)
  • 2 carrots (peeled and sliced diagonal) (150g)
  • 2 green onions chopped (24g)
  • 1 cup snap peas (cut ends off on an angle) (100g)
  • Gluten free rice or noodles (200g)


Directions

Mix together brown sugar, honey, chili garlic sauce, soya sauce, ginger and garlic. Set aside.


Lightly salt and pepper chicken strips and set aside. In a medium skillet heat 1 ½ tbsp. olive oil over medium heat. Brown chicken slightly for 2 minutes per side, add half of the prepared sauce and finish cooking chicken over medium heat. Continue cooking until sauce thickens and reduces (approx. 8-10 minutes). Remove from skillet and set aside.


Sauté Veggies in 1 tbsp. olive oil and ¼ of prepared sauce until cooked. Serve Vegetables and prepared chicken over Gluten free rice or noodles. Use remaining ¼ of prepared sauce to drizzle over top. Serve immediately.
