Ingredients  

  • 9 cups water (2 applications) (2160g)

  • 5 chamomile tea bags (6.5g)

  • 1 lemon (zested and juiced) (44g+7g)

  • 1 orange (zested and juiced) (60g + 12g)

  • 1 lime (zested and juiced) (38g +5g)

  • 1/3 cup honey (115g)

  • Option: garnish with lemon



Directions

Boil 8 cups water and pour over tea bags. Steep for 5 minutes and then discard tea bags.

 

In a medium pot, combine 1 cup water with zest and juice (orange/lemon/lime). Add honey and slowly bring to a boil over medium-low heat while stirring occasionally. Reduce heat and simmer for 3 to 5 minutes. Add to steeped tea and mix until combined. Let cool to room temperature (approx. 40 minutes). Place in an airtight container and finish cooling in the refrigerator overnight. Strain mixture using a cheese cloth or fine sieve. Serve over ice with a slice of fresh lemon.


 

Tips & Variations

Cooling at room temperature prior to refrigerating will help eliminate a film from forming. For a stronger tea increase tea bags being used not the steep time- longer steep times increase tannins being released resulting in a bitter flavour.
