Ingredients  

Muffins

1 package Kinnikinnick Pancake and Waffle Mix (454 g)

¼ cup vegetable oil (45 g)

½ cup granulated sugar (118 g)

1 large egg (56 g)

¾ cup water (160 g)

1 medium lemon - juice/zested (44 g + 6 g)

1 cup cranberries sliced - fresh or thawed(110 g)

Streusel Mix

¼ cup Kinnikinnick Pancake and Waffle Mix (46 g)

2 tbsp granulated sugar (26 g)

2 tbsp margarine - hard (30 g)



Directions

Streusel Mix

  1. Combine Kinnikinnick Pancake and Waffle Mix and sugar in a small bowl.
  2. Cut in margarine with a pastry knife or butter knife until crumbly. Do not over mix.

Muffins

  1. Preheat oven to 350°F (176°C). Lightly spray a muffin pan (do not use muffin liners).
  2. Combine vegetable oil, granulated sugar, egg and water in a medium bowl. Mix until combined.
  3. Slowly add dry ingredients to liquid mixture. Mix for 2 - 3 minutes with an electric mixer until combined.
  4. Fold in lemon juice, lemon zest and cranberries.
  5. Pour batter into muffin pan.
  6. Top with Streusel Mix.
  7. Bake in preheated oven for 20 - 22 minutes. Check that the muffins are done (muffins will spring back when touched lightly on the top).

Yields 15 Muffins

 

Tips & Variations

  • Do not use paper muffin liners with this recipe, muffins will stick to paper.
