Ingredients 

  • 1 lb large shrimp (about 30) peeled & deveined (with tails) (454g)

  • 2 stalks lemon grass (minced) - peel outer layer and use the bottom 6 inches of the stalk

  • ¼ tsp salt (1g)

  • 1tbsp fresh ginger (grated) (6g)

  • 2 garlic cloves (minced) (6g)

  • Lime (juiced and divided) (44g)

  • 2tbsp olive oil (26g) 




Directions

In a small bowl, combine lemon grass, salt, ginger, garlic, olive oil and lime juice. Mix until combined.


Prepare shrimp and place in a large plastic bag with prepared mixture. Gently shake to coat evenly and refrigerate for 1 hour.


Skewer shrimps for BBQ. Drizzle or brush remaining sauce from bag.

Cook shrimps on BBQ for 3-5 minutes per side or until light pink and white is opaque. Drizzle with remaining lime juice prior to serving.

 


 

Tips & Variations

Do not let shrimp marinate longer than an hour. Lime juice will begin to toughen shrimp
