Ingredients

2 russet potatoes (washed, sliced in ¼ inch thick medallions) (296 g)

3 tbsp olive oil (45 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

1 cup cheddar cheese (112 g)

4 slices of bacon (cooked/chopped) (30 g)

¼ cup chives (diced) (9 g)

Optional: Serve with sour cream or chipotle dip


Directions

  1. Preheat oven 400°F (204°C).
  2. Cut potatoes into ¼ inch Medallions.
  3. Place Medallions on a lightly greased foil lined pan single layer.
  4. Drizzle with olive oil and season with salt and pepper (both sides).
  5. Bake in preheated oven for 20 minutes. Flip Potato Medallions and bake for an addition 10 minutes (potato medallions should be cooked/crisp).
  6. Remove from oven and flip Potato Medallions over. Top with shredded cheddar cheese, chopped bacon and chives.
  7. Return to oven and bake for additional 3 - 5 minutes until cheese is melted.
  8. Place on a serving tray and serve with optional sour cream or chipotle dip.


Tips & Variations

  • For a bite size version- try using baby potatoes.
  • Use potatoes that are uniform in thickness
